Many textures, what works for me?

Okay ladies,
I have a problem, My hair is not as expected. My hair is not curly enough to do many of the amaxing styles I see here and on YT. I love two-strands, but they don't make those beautiful curly spirals at the ends, they just frizz up. My NATURAL stylist said she hasn't encounted this before. She did give me useful information about my hair. She said I have S-waves all over, but of different degrees, she said my hair is soft and the strands are thick, this is probably why mya hair doesn't curl fully. She said having thick strands and having thick hair are different.

Or should I say, I don't have defined curls.
